Happy almost Friday. Almost. You can do it.
This is Mom's stand-by recipe for the last 30 years. She got it from Grandma, and I think she got it off a chocolate chip bag. Remember that Friends episode where Phoebe was in search of her grandmother's amazing cookie recipe, thinking it was crazy impossible to make something so delicious, only to find the recipe on the back of the chocolate chip bag? (That's for you, Liza!) Well, you can call me Phoebe. These are that good.
They are like making a batch of cookies in 5 minutes flat. They taste like a cookie, they look like a cookie, they feel like a cookie. But they take you 1/7 the amount of time.
3/4 c. sugar
3/4 c. brown sugar (I started using the dark brown kind recently. Never going back to light.)
2 tsp. vanilla (be generous here)
1 c. margarine or shortening
2 eggs
2 1/4 c. flour
1 tsp. soda
1/2 tsp. salt
12 oz. semi-sweet chocolate chips
(add nuts if you want)
To make this the absolutely bomb-diggity, make half of your chips be semi-sweet, and the other half butterscotch!
Sift together the flour, soda, and salt and set aside. Blend together the remaining ingredients, except the chocolate chips. Blend with the sifted flour mixture. Add 9 oz. of the chocolate/butterscotch chips. Spread in a greased 9x13 inch pan. Sprinkle the remaining chips on top. Put in the oven at 375 degrees. After 3 minutes, run a knife through it all to swirl the chocolate. Bake for 18ish minutes longer.
