our favorite picnic salad...
1 can of black beans, drained and rinsed
1 can of corn, drained
1 can of mild rotel
1 large cucumber, seeded and chopped
3 green onions, diced
Toss with:
1/4 c. lime juice
1/4 c. evoo
1 tsp. cumin
1/2 tsp. salt
1 Tbsp. cilantro
